Caffeine is a natural component of coffee beans. A regular 8 oz cup of brewed coffee can have 65-120 mg of caffeine.Interestingly enough, decaf coffee is not completely decaffeinated. It is 99.9% caffeine free. So the same 8 oz cup of brewed decaf coffee will have just about 0.03% caffeine or about 0.2-0.4 mg.Our coffee candy creations also have a bit of caffeine in them. There is approximately 0.89 mg of caffeine per each 5 g of our chocolate covered coffee beans. And our coffee candy chews have approximately 0.04% caffeine in each piece.

We prepare our chocolates in the purest way and do not add preservatives. This makes them more sensitive to heat. We take every precaution to ship them so they arrive at your door in perfect condition, even during the warmest summer months. Polyphenols help lower cholesterol levels, prevent blood clotting, and neutralize enzymes which encourage the growth of tumors. They also stimulate the immune system for better functioning, and deactivate other cancer promoters. And would you believe that it also has fluoride, which obviously makes for stronger teeth? As if those aren’t enough, it also has virtually no calories and a cup of its brew contains half the amount of caffeine you would get from a cup of coffee. Healthy, weight-reducing, and can wake you up when you need to be active and alert! No wonder tea is considered a wonder drug!

One that flies around quite often that rarely is addressed honestly is this. “What’s the difference between grass fed and grain fed beef and what does it mean to me?” What this really comes down to is what the cattle rancher is trying to accomplish for a finished product as well as the limitations of feed resources for that rancher. Range fed or “grass fed” beef can have a tremendous flavor depending on the variety of range grass the beef is grazing on and is considerably cheaper to raise. However, steaks from grass fed beef tend to be tougher because of the lack of fat content. This is not to say you should avoid it.

For myself, I keep a whole beef in our freezer from our range feed cattle. Grass feed beef has some great advantages, but understand that the preparation time is considerable longer. My wife prepares each roast and all steaks in a marinade for 24 to 48 hours. Otherwise these steaks tend to be tougher.

“Grain Fed” or “Grain Finished” beef are generally raised on a grass and grain feed mix depending on the ranchers preference. Given the amount of grain provided, breed, and activity of the cattle, will determine the fat content of the beef. Meaning your steaks will have a marbled affect within the grains of the steak or roast, providing a juicy, airy and tender steak. This is what most people desire and frankly so do I.

When I want a juicy, succulent steak without all the fancy preparation, I will always go for our Prime or Choice Grade beef. Because 95% of our customers prefer a higher grade Certified Black Angus Prime steaks or Premium USDA Choice Grade Steaks, that is what we provide. Because most customers are not familiar with cooking and preparation techniques of pure Grass Fed Beef, the chances are high that they will not be satisfied with end product. In the end, we want our customers to be extremely happy with their purchase, which is why we limit our offerings to Prime and Choice Beef and Steaks.

Alaska Smokehouse Smoked Salmon features gourmet products which are produced in Alaska within an industry rich in scenery, history, and seafood. An abundance of delicacies are available from these waters, including wild Alaskan salmon, which makes a truly wonderful Smoked Salmon product, as well as herring, halibut, crab, prawns, pink shrimp, and sablefish. Most wild Alaskan fish stocks are at their healthiest levels in years, and we have shore-based processing plants in several Alaskan locations from which to source this delicious seafood.

All of our Smoked Salmon Smoking is done in Ketchikan, Alaska located in southeast Alaska (about 700 miles north of Seattle) among some of the richest salmon grounds in the world and “smoker-central” to our business. The smokers are integrated into our general production plant, which gives us unusually tight control and management of products, from the time the fish are hoisted on board the fishing boats in nearby waters, to when they ship from our warehouse.

Alaska Smokehouse is unique within the industry, in that its products are smoked in an Alaskan facility, located right on the docks where salmon are delivered directly from the fishing fleet.

Several forms of smoked salmon are available:

HOT-SMOKED — This is the traditional Alaskan method of smoking, where salmon is given a heavy smoke at a relatively high temperature. The result is a firm-meat product that easily flakes off. The smoked salmon sides, or portions, are then vacuum-packed in a clear plastic bag and frozen. This form is most familiar to people in the Pacific Northwest.

CANS — Following a rich history of salmon canning in Alaska, we’ve tweaked the process to offer a gourmet, specialty smoked seafood product. Cans are hand-filleted, bones are removed, and each piece of smoked salmon is packed individually into a can.

RETORTS — These are a relatively new form of smoked salmon, combining the shelf-stable qualities of cans with the eye-pleasing presentation of full fillets. Each fillet is placed by hand inside a gold foil “retort” pouch and vacuum sealed. The pouch is then cooked under heat and pressure in the same manner a can would be. (A fillet of fish in a “soft can” is a good way to describe retorts.)

Both cans and retorts offer you an excellent opportunity to share a taste of Alaskan smoked salmon without worrying about refrigeration or freezer space. Some points that differentiate cans and retorts:

Both are sealed, then cooked under heat and pressure, similar to canning done at home. The cooking process sterilizes the fish and removes the air from the can or retort pouch to make it shelf-stable. Retorts can be described as a “soft can,” with the fish packaged in a foil pouch instead of a stiff can. Cans require no additional packaging protection. Retorts are usually packaged inside a gift box. Salmon for canning is usually cut into smaller pieces to fit into the container. Because of their size, retort pouches can hold a full fillet of fish, in varying sizes, rather than the smaller pieces found in a can.Both cans and retorts have a long shelf life while still sealed — easily five years if the product has not been abused. Alaska Smoke house cans and retorts are packed only with fish — no water is added. The juice that is typically found when the pouch or can is opened is the natural moisture from the fish that has been cooked out during the thermal process.
